Figures you can quote, and what they do not say
These are the only figures of ours that exist so far. Each is true in the wording on the left and stops being true in the wording on the right.
200 Amsterdam restaurants, drawn at random with a fixed seed from 1,631 operational restaurants in Google Places, July 2026.
Not: a sample of Dutch or European restaurants.
163 of the 200 had a working website.
Not: 'eight in ten restaurants everywhere'.
An agent driving a real browser found a booking path on 79, could read the reservation form on 32, and reached the final booking step on 16 of the 163 working websites.
Not: '16 restaurants can be booked by AI'. The agent stopped before submitting; the measurement is traversability, an upper bound.
0 of 163 published a booking interface an assistant could call directly, in July 2026 and again in September 2026.
Not: 'no restaurant in Amsterdam is bookable by AI'. Assistants can drive human booking forms; none could book through a published interface.
34 of 165 re-checked websites served an llms.txt on 6 September 2026, up from 9 in July. None of the 34 gave that reader a way to book.
Not: 'a third of restaurants have adopted AI'. An llms.txt is a text file, not a capability.
Three rules
- Keep the scope. Every figure is Amsterdam, restaurants, July or September 2026, v1.0. We have not measured other cities yet and do not extrapolate; please do not do it for us.
- Keep the method version. A result is comparable only with results under the same version. The changelog is public.
- Keep the disclosure. G-Lab Studio builds G-Guest, a booking system for the kind of business these studies measure. If you quote us on bookability, say so, as we do.
